Mary Schluckebier is Executive Director of the Celiac Support Association (CSA), (formerly the Celiac Sprue Association/USA) serving those with celiac disease and other gluten related disorders. CSA is the largest member-based non-profit organization in America serving the entire gluten-free community. CSA’s emphasis is on education, research, and support for the self management of a healthy gluten-free lifestyle.
Mary authors and collaborates on informational, educational materials including a quarterly newsletter. Mary was diagnosed with celiac disease in 1986 and went to work to see that others have access to research, education and support ‘Promoting a Gluten- Free You.’ She became CSA Executive Director in 2000.
Mary has experience in both education and business with a Bachelor’s Degree in Family and Consumer Science and Business and earned a Master’s Degree in Adult Education Administration from the University of Nebraska. As a home economist she served the University of Nebraska as an area cooperative extension educator with emphasis in nutrition and 4-H, which included extensive work on the Omaha and Winnebago Indian Reservations and an inner city setting. Later, Mary worked as a University of Nebraska State Extension Specialist, as well as assisting her husband Lynn in the development of a successful livestock/grain operation. Mary has been the owner of Adele Publishing Company since 1976, which specializes in publishing farm management education materials. Mary and Lynn are the parents of one son. He and his wife made them grandparents of two daughters.
Anthony Colatrella, MD
Anthony Colatrella, MD, is a well-versed celiac-specializing gastroenterologist and a Founding Partner of Pittsburgh Gastroenterology Associates. He diagnosed his first celiac patient in 1979. He has participated as Chief Site Investigator in multiple celiac research studies including studies with both Alba Therapeutics and Alvine Pharmaceuticals. He is retired from full-time gastroenterology practice but continues to participate in research activities and independent consulting practice. He was also appointed to be the Chief Medical Officer of the Celiac Support Association Medical Advisory Team.
Francisco Leon, MD PhD
Francisco Leon, MD PhD, is Celimmune’s CEO and Chief Medical Officer.
He communicates characteristics and expectations of the non-dietary treatments for celiac disease and gluten-related conditions on the market and in clinical trials. He is a clinical immunologist who received his MD from Autónoma University in Madrid, Spain and received clinical training in Madrid. As an immunologist, he worked at the University of Tromsø (Norway), Autónoma University of Madrid and the Laboratory of Clinical Investigation/Laboratory of Molecular Immunology, NIAID, NIH (Bethesda, MD). The focus of his basic research was mucosal immunology and, in particular, celiac disease and inflammatory bowel disease. In the Biotech and Pharmaceutical Industry, Francisco Leon has focused on early-stage development and translational research in immunologic diseases (rheumatoid arthritis, transplantation, IBD, psoriasis, celiac disease, asthma, etc) in Bristol-Myers Squibb, MedImmune, Alba Therapeutics and Centocor/Janssen. Francisco is also Adjunct Research Associate Professor of Medicine at Jefferson Medical College (Philadelphia). He has authored or co-authored more than 60 peer reviewed articles and book chapters as well as several patents.
The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. Jen Cuevas experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious!
Just a few short years ago, Jen was ill with a multitude of issues (although not typical “Celiac” symptoms), including high cholesterol, pre-diabetes, sudden weight gain [over 60 pounds], Hashimoto’s, and arthritis (read more of her story here). After more than seven frustrating visits with various doctors, she finally learned about her gluten sensitivity and Celiac disease. In becoming well, she found that life without gluten was really great from a health perspective, but affected everything else that had a social factor.
In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After further health issues inspired her to do more research, Jen went completely grain and soy free in 2012, and became a certified coach under the direction of Gluten Free Society. She uses her own health journey to coach and inspire others to consider dietary changes as a way to achieve optimum health. In 2013 she established a support group, and found that food availability continued to be the biggest barrier to success. She began developing food products that support a grain-free, soy-free and even dairy-free lifestyle; many items are allergy-friendly and are free of refined sugars. She also offers allergen-free Communion to churches, raising awareness about the effects of gluten exposure.
Sema is only 17, articulate, artistic, and passionate about raising awareness. She lives in St. Louis and is a National Foundation of Celiac Awareness featured Gluten Free blogger. ‘Eat Without Gluten’ is featured on the National Foundation for Celiac Awareness’ webpage, and her gluten free cartoon movie ‘Draw my life’ on YouTube has been featured in many countries, from Ireland to Australia. The blog is written to provide positive, practical, educational and insightful information on the gluten-free diet. Sema is one of the first gluten-free teen bloggers both in the United States and worldwide.
